The holidays are behind us, so we no longer have an excuse to eat cookies for breakfast. If you’re like us, your body is craving a bit of a re-set. This is a super healthy and beyond easy recipe from our fav food blog Modern Proper. We love the versatility of the recipe, you can make this with any fruit of your choosing. We just love blackberries, so that is our go-to. But peaches, apples or strawberries would be equally delicious. These can be eaten cold, which is how we prefer them, or warm. For best results, think at least eight hours in the fridge, so make these the night before, and have a stress-free morning! Enjoy.

Ingredients

¾ cup old fashioned rolled oats

¾ cup coconut milk

¼ cup shredded coconut

1 teaspoon vanilla extract

2 tablespoons berry jam of your choosing

Sea salt

¼ cup fresh berries of your choosing, for serving

Directions

In a 16-ounce airtight jar, combine the oats, coconut milk, shredded coconut, vanilla, jam, and a pinch of salt. Seal tightly and shake until well-combined.

Place in the refrigerator overnight. Top with the berries before serving.
