This is one of those desserts that you can feel proud to bring to a gathering, pot luck or simply to make your family happy on any old Tuesday, because it so damn easy. April is the beginning of Strawberry season, and they are hands-down our favorite berry. Famously low in sugar and high in fiber, this fruit basically makes this dessert a health food. This is the logic in our home anyway. We hope you enjoy!
Ingredients
1 sheet puff pastry
1 1/2 cup fresh strawberries sliced
1/2 teaspoon vanilla extract
3 tablespoons sugar
1/4 cup roughly chopped pistachios
Directions
Preheat oven to 400 degrees.
Wash the strawberries, remove the leaves and cut in half lenghtwise or in quarters depending on their size. Add the sugar, vanilla extract and mix. Let it sit for 10 minutes.
Roll thawed puff pastry sheet on a sheet of lightly floured parchment paper.
Add a cup of strawberries and fold over pastry dough.
Egg wash the dough and sprinkle sugar over top.
Fold edges over and bake 15-20 minutes or until edges are slightly golden.
Top with chopped pistachios and vanilla ice cream!
